Introduction
The "legend" of the Pinx brunch experience was built on four legs: Sweet Potato Pie Waffles with Salted Bourbon Caramel Sauce, Red Velvet Pancakes with Cream Cheese Glaze, Maple Glazed Apple Wood Smoked Bacon, and Country Biscuits. Biscuits are not as exotic as the other items, but the right recipe paired with preserves or Hot Honey, will make you see sound. This recipe here will do that as it did that Saturday that the thought of Pinx was born.

Directions
1. Preheat oven to 400 degrees.
2. Line baking sheet with parchment paper.
3. Pour biscuit mix in medium size bowl.
4. Cut butter into flour mixture with a pastry blender (or mixer or food processor) until mixture. resembles course crumbs (3-5 min), this can also be done by hand.
5. Make a well in center of butter and flour mixture, pour in 3/4 cup cold buttermilk, gently stir until just combined.
6. Flour your hands.
7. Place dough on floured work surface and pat together into a rectangle.
8. Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough.
9. Roll dough on a floured surface to about 1/2 inch thick.
10. Cut out biscuits with biscuit cutter or knife.
11. Transfer biscuits to prepared baking sheet and brush tops with 1 tablespoon of buttermilk or butter.
12. Bake about 10-15 min or until golden brown.
13. These biscuits come out flaky. If you are looking for fluffy biscuits, skip the folding process.
14. Pat dough together until combined (twice) then cut out biscuits.
