Sweet Potato Pie Waffle

6-8 Belgium Waffles

Introduction

Imagine if you will..a waffle. Now stuff it with a Sweet Potato Pie. Top that with a single scoop of Vanilla Ice Cream. And drizzle that with a Salted bourbon Caramel Sauce. That is what started Pinx. And this mix is the foundation for that waffle. We hope you will use this in your kitchen to experience something memorable.

Sweet Potato Pie Waffle

Directions

Part 1: Sweet Potato Pie

1. Preheat oven to 350.

2. Boil 3 cups of yams.

3. Melt butter.

4. Remove skin from yams and transfer to mixer or large bowl.

5. Mash the sweet potatoes.

6. Add butter and mix.

7. Add brown sugar, white sugar, cinnamon, nutmeg, eggs, vanilla, evaporated milk and condensed milk.

8. Mix until well combined.

9. Prepare pie crust for one pie and remaining batter, bake in 8 x 8 or 9 x 13 pan, bake at 350 degrees for 20-30 min. until golden.

10. Remaining batter used for sweet potato pie waffles.

11. Let pie cool and top with whip cream!


Part 2: Salted Bourbon Caramel Sauce

1. Combine the sugar and water in a heavy-bottomed sauce pan.  Briefly stir to combine.

2. Turn the burner on to medium-high heat.  Then — this is very important — do not stir or touch the pan until the sugar has caramelized.  The sugar mixture will go from being completely clear, to a champagne color, to a light golden color, and then to increasingly darker shades of amber.  (Keep a close eye on the sugar, as it darkens quickly once it begins to caramelize.) Once the sugar reaches a deep amber color (about the color of a copper penny), remove the saucepan from the heat and turn the burner off.

3. Right away, begin to slowly and carefully pour the heavy cream into the sugar mixture, whisking as you pour to quickly incorporate the cream.  (The mixture will bubble furiously when the cream hits the hot sugar, so be very careful!)  Add in the butter and whisk until combined. Add in the vanilla, bourbon and sea salt, and whisk until combined.

4. Serve immediately.  Or let the sauce cool until it reaches room temperature (it will thicken considerably as it cools), then transfer the sauce to a sealed container and refrigerate for up to 2 weeks.


Part 3: Bringing it all together! Pinx Potato Pie Sweet Waffle 

1. Pre-Heat waffle maker.

2. Melt butter and set aside.

3. In medium bowl, whisk eggs and then add buttermilk, condensed milk, vanilla and melted butter.

4. In separate large bowl, pour in flour mixture and make a well in center of bowl.

5. Pour wet ingredients slowly into flour mixture bowl and mix until just combined.

6. Spray waffle maker with non-stick spray on both sides.

7. Scoop mixture onto waffle maker and spread batter.

8. With small scooper, place sweet potato pie (already baked) in the middle of each waffle quarter.

9. Place a little more waffle batter to cover sweet potato pie mixture and cook until golden brown.

10. Enjoy with Salted Bourbon Caramel and whip cream and dust with powdered sugar (try a la mode if you’re in the mood for dessert)!

Sweet Potato Pie

  • 3 cups of yams

  • 1/2 cup butter melted

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 1 teaspoon cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp salt

  • 1/2 cup evaporated milk

  • 1/2 cup condensed milk

  • 2 eggs

  • 1 tablespoon of vanilla


Salted Bourbon Caramel Sauce

  • 1 cup granulated (white) sugar

  • 1/4 cup water

  • 1/2 cup heavy whipping cream

  • 1/4 cup butter

  • 1 teaspoon vanilla extract

  • 2 tablespoons bourbon

  • 1 teaspoon fine sea salt


Sweet Potato Pie Waffle

  • 2 1/2 cups Pinx@Home Sweet Waffle Mix

  • 4 large eggs

  • 2 cup buttermilk

  • 1/2  cup condensed milk

  • 2 tsp vanilla

  • 1/2 cup butter - melted

  • 1 1/2 cup of sweet potato pie (above)
